Job Description:

The Kitchen Manager oversees the daily operations of the kitchen, ensuring high standards of food quality, hygiene, and staff efficiency. This role involves managing kitchen staff, controlling inventory, maintaining health and safety standards, and ensuring smooth kitchen workflow. The ideal candidate should be organized, hands-on, and experienced in kitchen leadership.

Key Responsibilities:Kitchen Operations:

  • Supervise all kitchen activities to ensure food is prepared and presented to high standards.
  • Maintain consistency in food preparation, quality, and presentation.
  • Implement and uphold kitchen hygiene and safety standards (HACCP, etc.).
  • Monitor kitchen workflow and ensure efficient food production and service.

Staff Management:

  • Recruit, train, and manage kitchen staff (chefs, cooks, and kitchen assistants).
  • Schedule shifts and assign duties to meet operational needs.
  • Conduct regular performance reviews and provide staff feedback and development.
  • Foster a positive work environment and team spirit.

Inventory & Procurement:

  • Monitor inventory levels of ingredients and kitchen supplies.
  • Place orders and liaise with suppliers to ensure timely and cost-effective procurement.
  • Manage stock rotation to reduce waste and prevent spoilage.
  • Keep accurate records of stock usage, purchases, and kitchen expenses.

Cost Control & Budgeting:

  • Assist in setting food cost targets and controlling waste.
  • Monitor portion sizes and reduce unnecessary overheads.
  • Support menu planning and pricing in collaboration with chefs and management.

Health, Safety & Compliance:

  • Enforce compliance with local food safety and sanitation regulations.
  • Conduct regular kitchen inspections and safety audits.
  • Train staff on proper food handling and hygiene protocols.

Requirements & Skills:

  • Diploma or degree in Culinary Arts, Hotel Management, or related field.
  • 3–5 years’ experience in a kitchen supervisory or managerial role.
  • Strong leadership and communication skills.
  • Solid understanding of food safety standards and kitchen operations.
  • Ability to manage a team under pressure and during peak hours.
  • Experience with inventory and cost control.
  • Basic computer skills (inventory software, Excel, etc.) are an advantage.
